Feta cheese quick bread - fluffy, moist and buttery, this savory quick bread recipe is ideal for breakfast, snack or even dinner.

Ingredients

  • 1/2 cup plain yogurt (regular or Greek)
  • 1/2 cup mayonnaise (preferably without sugar)
  • 3 eggs
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 5 oz feta cheese
  • 2 Tbs butter (for greasing the pan)

Instructions

  1. Preheat oven to 380° F. 

  2. Using a hand mixer, beat the eggs, with the mayonnaise, and yogurt until fluffy and smooth.

  3. In a separate bowl, mix the baking powder, baking soda and the flour, then add to the egg mixture, and whisk until you get a smooth cake batter. 

  4. Crumble the feta cheese, and add to the batter. Mix lightly to distribute.

  5. Melt the butter, and brush the bread pan, or cake form all over. 

  6. Pour the batter in the prepared bread pan, and bake for 35-40 minutes, or until a toothpick inserted in the bread, comes out clean.
