Coffee coconut fudgsicles

Coffee coconut fudgsicles - creamy, cold and totally indulgent, these frozen treats will cool you off and give you a boost on a hot afternoon!

Ingredients

  • 1 227g container mascrapone cheese
  • 1/2 cup sweetened condensed milk*
  • 1/2 cup light coconut milk
  • 1/2 cup unsweetened coconut flakes
  • 1 tsp vanilla extract
  • 1 tsp instant coffee

Instructions

  1. Add all ingredients, except the coffee in a bowl, and using a hand mixer beat until smooth.

  2. Separate about 1 cup of the mixture, and add the instant coffee to it.  Stir, until blended well.

  3. Fill in popsicle molds about 2/3 each with the coconut mix, then top with the coffee mix.  Place in freezer for about 40 min.  Take out and insert a wooden stick, then return to freezer until the popsicles have hardened.

  4. Before serving, dip each mold into hot water briefly to help loosen the popsicle.  Optionally, dip the popsicles in toasted coconut flakes, and drizzle with coconut caramel.
